Bacon Roasted Sweet Potatoes

A delicious combination of bacon and roasted sweet potatoes. The perfect side dish!

Ingredients

  • 4-6 sweet potatoes chopped into 1 in cubes
  • 1 package bacon
  • 1 tsp sea salt
  • 1 dash cinnamon

Instructions

  • Preheat the oven to 400 degrees F. Place bacon on a baking sheet.
  • Bake for approximately 20 minutes, until crispy.
  • Remove the bacon from the pan and place on a paper towel-lined plate.
  • Drain half of the bacon grease from the pan. Add the chopped sweet potatoes, sea salt, and cinnamon. Use the remaining half of the grease to coat the sweet potatoes.
  • Bake sweet potatoes in the oven for approximately 30 minutes, until crisp.
  • While the sweet potatoes are baking, chop up the cooked bacon.
  • After the sweet potatoes are roasted, add in the chopped bacon, serve and enjoy!
